Teff is a tiny grain (the smallest in the world, actually), about the size of a poppyseed. It is derived from an ancient East African cereal and is a nutritional powerhouse! Compared to other grains, it has a much larger percentage of bran and germ so it's a very good source of dietary fiber, protein, iron, amino acids, vitamin C and calcium. The calcium content in teff significantly surpasses that of all other grains.Teff flour imparts a light, nutty flavor in your baked goods. It will give a whole grain taste to your gluten free baked goods. Substitute teff flour for about 1/4 of the flour called for in your favorite recipes.
